You can change this in:
System Settings → Mouse → Scroll & Zoom → Natural Scrolling
Third-party apps
Some Mac users prefer keeping “Natural Scrolling” enabled on the trackpad, while using traditional scrolling on the mouse. Apps like these allow the two devices to use separate scrolling directions:
• Scroll Reverser — lets you reverse scrolling independently for either the mouse or trackpad

Speed: With your mouse connected, go to System Settings → Mouse, then adjust the Tracking Speed slider.
Acceleration: Click Advanced below and turn Pointer Acceleration on or off.

Acceleration: macOS doesn’t currently expose scroll acceleration as a setting—you’ll need a third-party app for this.
